Quiche is considered a French dish; however, using eggs and cream in pastry was practiced in English cuisine as early as the 14th century and Italian cuisine as early as the 13th century. Quiche lorraine is a popular variant, originally an open pie with eggs, cream, and lardons. Later versions of the dish usually include cheese, and the lardons are replaced by bacon.
