Nouilles of 3rds, Cambodian Take on Vietnamese Pho

When I drive on PCH through Lomita, I’m always looking for new restaurants. I’ve been happy to see new regional Chinese restaurants appear in the last few years like DimSum 101. Due to the construction in the strip mall taking place, I was never interested in trying out Nouilles of 3rds.

My one year of French in high school failed me. Until I visited them, I did not know that nouilles is French for noodles. 3rds is a reference to the rules of thirds or rule of thumb for composition in photography.

The interior is cozy, with only five tables in service. The tables and walls are dark stained wood with wrought iron pendants providing accent lighting. A group of Asian ladies was having a good time discussing nearby restaurants; soon after, another group entered. 

Nouilles of 3rds is a blend of Southeast Asian flavors specializing in traditional Cambodian noodle soups. A sister/brother team began the operation using enhancing recipes handed down through generations. Chef Maria now runs the kitchen and also waits on customers.

The Herb Buttered Prawns was an excellent way to start the meal. They are grilled and served on a skewer. The lemon grass paste provides a delicious flavor to this item. I got hooked on the Asian pickled vegetables served on the side. 

Nouilles of 3rds - House Noodles
NO3 House Noodle Soup with thinly sliced prime beef and bone marrow

They simmer their stock for seven hours with beef bones, cinnamon sticks, aromatic galangal, fish sauce, rice noodles, basil, scallions, and cilantro to create the NO3 House Noodle Soup. They add thinly-sliced prime beef, tendon, and a marrow-filled bone.

I have had Hainan Chicken from several different restaurants, and this one was too dry for my liking. Fortunately, they are accompanied by three different sauces – a thick and slightly sweet soy sauce, chopped ginger, and a mild chile sauce—each provided relief to the Hainan Chicken.

During my two visits, Chef Maria was a one-woman operation. She took orders, prepared them, and served them to our table. She seems burned out and so don’t expect a smiling face.
