The unbearable hot summer in LA fortunately has passed and we are enjoying low humidity and cool evenings. While LA residents enjoy a plethora of fruits and vegetables year-round, produce found locally is commensurate with the season. That said, corn on the cob is gone and fall vegetables like cabbage, brussels sprouts and butternut squash are now readily available.
Bettolino Kitchen has prepared their new fall menu with seasonal ingredients. The Brussels & Balsamic starter is made with roasted brussels sprouts, sauteed prosciutto, woody rosemary croutons, and fresh basil tossed in a flavorful balsamic sauce.
The new Figs & Zola salad is prepared with local mixed greens, fresh figs, caramelized walnuts, and gorgonzola cheese. It is then tossed in a shallot vinaigrette and topped with thin slices of bartlett pears. This salad is ideally paired with a prosecco.
Gnocchi can be dense and heavy and until recently was never a pasta that I would order. Bettolino Kitchen’s gnocchi however, is light and pillowy. This is nice because the pasta is a delight to eat. Their Gnocchi alla Zucca is made with Yukon potato gnocchi, handmade fennel sausage, seasonal butternut squash, fresh sage, and a delicious brown butter sauce.
A new vegetarian dish is their Parmigiana di Melanzane. Eggplants are layered with homemade tomato sauce, basil, mozzarella, parmesan sauce, fresh baby spinach, and basil oil. This is a colorful dish that is full of flavor.
Nothing communicates fall better than a pumpkin cheesecake. Bettolino Kitchen add their flair by making it roasted pumpkin, ricotta cream, and a biscotti crust. Your slice resides in a bed of condensed milk with caramelized walnuts and fresh strawberries.
